Use a sharp knife to peel the butternut squash. Cut it in half and remove the seeds. then cut it into cubes. Chop the leek including the white and light green parts. Mince the garlic clove. In a large pot over medium heat, add the butternut squash cubes, leek, garlic, chicken or vegetable stock. Bring everything to a simmer and cook until the butternut squash is very tender, about 20 minutes.   Remove from heat and let cool slightly. Puree using an immersion blender or in batches using a regular blender until completely smooth. Stir in the heavy cream and season with salt and pepper to taste before serving.
